So, I opted to stay inside and make it a “Wii” run day. I ran for 30 minutes and added in some boxing to complete my workout. Then I pulled out my kettle bells to do a core workout. I definitely got my sweat on…in my jammies, none-the-less! Rounded out my workout with a smoothie and I was good to go!
It was haircuttin’ day for the princesses. My princess Makenna has been growing out her bangs and was ready to make the plunge and go short!
My beautiful baby…growing up WAY too fast. It’s hard for me to believe she’ll be turning 8 in a week!
My princess Cailyn informed me that she would only be getting her bangs cut because she was letting her hair grow long like Rapunzel’s!
I told her she needed to sit still while her sister got her haircut, so she wiggled to the music while sitting on the chair! This is progress for her!
The hair stylist just asked her if she had “ants in her pants” because she was having a hard time sitting still!
I am convinced that the word “still” is not in her vocabulary, so I asked her to sing us a song to momentarily distract her wiggles! It worked…for about two seconds!
And yes, more zucchini! And a spaghetti squash to round out our garden treasures! Thank you Miss Trish for blessing our family with such a fabulous bounty of veggies!
Dinner was, you guessed it, full of fresh veggies! I fixed these mini frittatas with red peppers, broccoli, zucchini, and a little cheese. These are always a hit with our family (even my picky eater) and are easy to prepare…pick your favorite veggies, add a few eggs, and you’re good to go!
I like to make them in a muffin tin sprayed with cooking spray. This makes it fun for the princesses to create their own….perfect size for little hands!
I think spaghetti squash is on the menu for tomorrow night, but for now I’m thinking something sweet is calling my name. How about a Pumpkin Spice Chocolate Chip cookie…or two?!
I’ll be dreaming up some more zucchini recipes as my head hits the pillow tonight! What’s your favorite zucchini recipe?

It was fun!! Thomas couldn't stop talking about his "girlfriends" who chased him in the garden. It was a great way to spend a beautiful day. Glad you enjoyed them. I may need some of your recipes. We share veggies, you share recipes......fair trade :)
