Pinterest Projects and Summer Kick-Off!

It’s hard to believe Summer is already here!  And I’m so glad that it is!  While we had a great school year, I was definitely wearing down those last few weeks.  It was hard for me to keep the princesses motivated when I myself wasn’t feeling 100% and motivated!  In any case, we did it and we celebrated with an end of the year trip to the San Diego Zoo to see some of the animals we learned about in science and then treated ourselves to lunch at Stacked.  While it would not be my first restaurant choice (although their sweet potato fries are pretty good), it’s what the princesses chose to kick off their Summer vacation. 

As for me, I got started on some Pinterest projects I’ve had my eye on for a while now.  I had just finished painting my little Cailyn’s room and was looking for some ideas to get some of her “stuff” off of the floor as her room is a bit on the small side.  For the stuffed animals she just couldn’t bring herself to part with, I found these yellow wire baskets at Home Goods.

Hung with “Command Strips”, these can be moved without damaging the walls.  The intention was to create a little reading/play nook and I think it serves it’s purpose!  We’ve recently added a bean bag, which she loves to sit and read in!

I’m getting ready to tackle my Makenna’s room next…we’re amping up the western theme for her!

And speaking of projects, I’m super excited that our “family” garden is now producing loads of beautiful squash, zucchini, green onions, green beans, and hopefully some tomatoes real soon!  Unfortunately I can’t take credit for this garden, but it has definitely become a family affair.  The garden is at my parents’ place, but we all had a small part in getting it started and thanks to my dad’s awesome “compost pile” it is flourishing! 

So far we’ve had roasted and sauteed lots of squash and I even put some in the freezer for soups and muffins…yes, there is a lot!

In the mix…yellow squash, green beans, green onion, some fresh cracked pepper, smoked paprika and a little coconut oil.

DSCN7105 Our first grilled dinner of the Summer…Grilled Chicken with a Cucumber-Lemon Salsa and Honey-Yogurt Sauce (dairy-free)

Cucumber-Lemon Salsa

Ingredients:

1 seedless cucumber, chopped

I large tomato, chopped

1/4 cup red onion, chopped

2 cloves fresh garlic, minced

Zest of 1 lemon

2 Tbsp fresh lemon juice

Directions:

Place all ingredients in a small bowl and carefully mix.  Can use immediately or place in the fridge for an hour before serving to allow the flavors to meld!

Honey-Yogurt Sauce

Ingredients:

1/3 cup plain coconut milk yogurt

2 Tbsp coconut milk

1 Tbsp raw honey

Directions:

Place all ingredients in a small bowl and mix well.  Serve atop grilled meat or as a dip for fresh fruit.DSCN7123There’s something about farm fresh produce that gets me all giddy, which is why I so look forward to frequenting local farms and Farmer’s Markets during the Summer.  I’ve found a local “gem” just down the road from us which I find myself at more than once during the week!  Grebar Farms has had the best strawberries we’ve had, not to mention sweet blueberries, olallieberries (cross between a blackberry and raspberry), apriums (cross between an apricot and plum), and a load full of different greens (kale, collards, swiss chard, pea shoots and lots of fresh herbs)

DSCN7126 Fresh Summer Strawberry and Arugula Salad with a drizzle of olive oil, a squeeze of fresh lemon juice and a sprinkle of pepper.  A perfect side dish to any Summer grilled meal!!

DSCN6817 Swiss Chard, Chicken and Onion Tacos all tucked into a homemade Paleo Tortilla…

Paleo Tortillas (great for tacos and wraps!)

Ingredients:

1 1/4 cup blanched almond flour

5 Tbsp psyllium husk powder

1 tsp sea salt

1 cup water

2 eggs

Coconut oil (for cooking)

Directions:

Combine dry ingredients in a medium mixing bowl.  Add eggs and mix well.  Add water and mix well.

Let dough sit for 2 minutes until it sets up a bit.

Separate dough into 10 balls.  Place onto oiled parchment paper (I used coconut oil).  Top with another piece of oiled parchment paper.  Roll out dough into an even circle shape…about 1/4 inch thick.

Heat a large pan to medium-high heat with a bit of coconut oil.  Place unbaked tortilla into pan and cook until light brown.  Flip and cook through on opposite side.  Serve up with your favorite fixings!!

Dress It Up!

Already three days into week three…wow, how time flies when you’re havin’ fun busy!  We’re still on the “paleo” bandwagon enjoying our meals and treats and not at all feeling like we’re missing out on anything or having the desire to “indulge.”  I have to admit, though, that this week I’ve run out of steam in the creativity department, so we’re having some repeat meals for pure convenience.  However, I did kick it up a notch in the “greens” department…dressin’ things up a little!

Everyone knows that I love me some green salad.  In fact, the more mixed greens I can get into one salad the more I love it!  The hubs, on the other hand, will eat the salad if it is already placed on his plate, but it isn’t typically the first thing he grabs for on the table.  He’s been even more hesitant to reach for some of the leafy greens since his beloved ranch dressing is no longer on the menu!  So this seemingly terrible situation promptly sent me out on a mission to create a paleo ranch-style dressing that would also pass the “good-taste” test.  After a few failed attempts, I think we’ve finally found our match!

DSCN6343Paleo Ranch Style Dressing

Yields about 2 cups

Ingredients:

1 cup olive oil

1 cup canned coconut milk

1 Tbsp apple cider vinegar (I like to use raw)

1 Tbsp Dijon mustard

2 tsp dill

2 tsp garlic powder

1 tsp onion powder

2 Tbsp fresh chives

4 Tbsp fresh lemon juice

1/2 tsp parsley

1/2 tsp thyme

1/2 tsp sea salt

1/2 tsp fresh ground pepper

Directions:

Combine all ingredients into a blender or food processor and pulse until mixed well.

DSCN6340This dressing has become a universal condiment in our house…it goes on sandwiches, it’s a dip for raw veggies, and it definitely takes our salads to the next level! 

If you’re looking for something a little more on the sweeter side, this dressing really hits the spot.  DSCN4354 Creamy Citrus Dressing

Yields about 2 cups

Ingredients:

1 cup canned coconut milk (you can use plain greek yogurt if you’re doing dairy)

1 small shallot, finely minced

1 tsp orange zest

2 Tbsp freshly squeezed orange juice

2 Tbsp freshly squeezed lemon juice

1 Tbsp extra virgin olive oil

1/2 tsp tumeric

1/8 tsp smoked paprika

sea salt

fresh ground pepper

Directions:

Combine all dressing ingredients together and whisk until thoroughly combined.  Taste for seasoning and add salt and pepper to taste.  Refrigerate until ready to serve.

DSCN4351This is one my favorite dressings for kale salads…mix or “massage” it over all the kale leaves and let it sit in the fridge for about an hour before eating and it really softens up the kale!   If you’re a fan of kale, here’s another one of my favorites (this was pre-paleo, hence the added brown rice!).

I see I have a “creamy” trend going on here! 

Creamy  Avocado Dressing (click for recipe)

DSCN3589This dressing has got a lovely “tang” to it and is paired nicely with your favorite taco salad or  lettuce wrap.  It’s another one of those dressings you can literally use on just about anything…thick enough for a dip, spreadable enough for a sandwich and just right for any salad creation!

While I may have gotten into some sort of “paleo” rhythm and things have cooled off a bit in the kitchen, things are heating up at the gym this week.  We’re at the halfway point in the challenge and now it’s time to test what we’re really made of!!  I’m definitely ready to push myself and get my sweat on this week!

I decided to do a 2.5 mile morning run on Monday only to come home and find out Monday’s WOD…

Time started with the run followed by as many pull-ups as you could do.  Every time you dropped from the bar or couldn’t complete a full pull-up you had to head out for another 400 M run!  I ended up running 4 times and did 75 banded pull-ups for my final time.

Tuesday my arms and legs were pretty worked, so I opted for a 2.5 mile walk instead of a run!  And as part of our challenge this week we are to start and/or end our day with 25 sit-ups, 25 squats and 25 push-ups….more sweat!!

It was pretty cold at the gym this morning, so I didn’t actually break a sweat but it definitely got my heart rate pumping!  I completed my rounds of sit-ups, squats and push-ups and also decided to go for a 20 minute run at the softball fields while my Princess Makenna was practicing. 

Whew!  It’s been a good week so far and I’m looking forward to finishing it out strong!

My morning in the kitchen…

I feel like “little miss homemaker” today!  All for a good cause, of course!  My brother-in-law and his crew have been working hard over the past couple of weeks at making our side yard into something much more pleasant to look at, not to mention more functional.  The guys arrived at the house bright and early this morning to pour the concrete, which forced me out of bed and got me moving out the door to do my run before it got too hot!  After arriving back home from a great run (compared to yesterday’s fail), I was feeling refreshed, so I thought I’d show my “thanks” to those hard working gentlemen with a little something sweet. 

DSCN4902 They gladly accepted “Almond Joy Bars” and a few slices of a “Chocolate Chip Cookie Pie” with open arms (and the hubs is wondering where his portion is!)

DSCN4898 Both recipes were adapted from “Mama Pea” over at Peas and Thank You.  I’ve made both of these treats many times before with variations of gluten free flours, but this time I went with Pamela’s Baking Mix just to make life easy on myself (and because I wanted the guys to enjoy their treats on their break, so I had to make it fast)!  For the Almond Joy Bars I subbed in Pamela’s Baking Mix for the whole wheat flour, which means I had to take out the baking soda.  I use gluten free rolled oats, used 1/4 cup raw sliced almonds instead of roasted and used crunchy almond butter with flax seeds instead of regular almond butter.  I also swapped out the organic sugar for a 1/2 cup of raw coconut crystals and I didn’t have coconut extract, so I just used vanilla.

DSCN4901For the cookie pie, I also used Pamela’s Baking Mix in place of the whole wheat flour and subbed in gluten free oat flour for the all-purpose.  If you use Pamela’s Baking Mix you need to take out the baking soda and powder because it’s already in the mix.  And again, I subbed in raw coconut crystals for the organic sugar.  I think the only thing missing was a cold glass of milk to go with their slice of ooey-gooey chocolatey goodness!

DSCN4914 DSCN4915 DSCN4912 The hubs is most excited about the “fire pit”…he’s going to have to wait awhile to put it to good use because it’s way too hot right now!  I’m looking forward to planting plants in my flower boxes!

So now the house smells wonderfully delicious and the hubs walks in from graciously helping some friends of ours move all morning and I have nothing to offer him…oops!  No worries, nothing that a batch of Chewy Chocolate Chip Cookies can’t smooth over!  I’m on it!

While the hubs is enjoying his freshly baked cookies, I’m loving the refreshing taste of “cucumber water” on this hot summer day!DSCN4906 DSCN4910

And what better to go with it than a cool, refreshing salad.  This is my new favorite, at least for this week!  There’s a lot to this salad, but it is so worth the effort and you’ll have A LOT to last you the entire week.DSCN4894 Kale Power Salad (aka “detox salad”)

(inspired by Oh She Glows)

Yields 6-8 servings

Ingredients:

2 broccoli crowns

1 head cauliflower

1 medium carrot, grated

2 cups finely chopped kale ( I used curly kale)

1/2 cup fresh parsley, finely chopped

1/2 cup raw sunflower seeds

1/2 cup raw sliced almonds

1/2 cup dried organic cranberries

1/2 cup dried organic cherries, chopped

juice of one lemon

2 Tbsp raw apple cider vinegar

1 Tbsp pure maple syrup

salt and pepper to taste

Directions:

Wash and rinse all vegetables, then cut the broccoli and cauliflower into florets.  In a food processor, process the broccoli and cauliflower until fine and add them to a large mixing bowl.  This made need to be done in batches depending on the size of your processor.

Add grated carrots, kale, parsley, sunflower seeds, almonds,  and dried fruit to the bowl.  Stir all ingredients to combine.

In a small bowl, whisk together lemon juice, vinegar and maple syrup until well blended.  Pour dressing over all the ingredients in the bowl and toss well to combine.  Season with salt and pepper to taste and mix well again.  Enjoy and feel rejuvenated!

What’s Been Happening…

Ugh!  I wish I could tell you that I’ve been busy working on some fabulous eats for you all, but that hasn’t been the case!  It’s already nearing the end of June and our days have been coming and going so quickly that they seem to all run together in a big blur.  So, here’s a quick (hopefully) recap as to what’s been happening this last month that has kept me from sitting down in front of the computer.

There’s been our almost daily chores of taking care of the pony and the chicks.  This in itself takes up most of our morning and prayerfully we make it home in time to sit and unwind with a nice lunch.  It doesn’t always happen, which results in some grumbling and whining from said princesses!  At least I remember to pack the snacks and plenty of water to keep them hydrated after a good ride and some hard work of scooping poop!DSCN4580 She says she’d rather scoop poop than clean her room!

The chicks are growing by the minute and are now in the “ugly” stage where all their cute little fuzzy feathers are gone.  The princesses like to spend time with them outside watching them scratch and preen their feathers!  Papa says they should start laying eggs soon!DSCN4576 DSCN4582

Our first trip to the beach this summer and we didn’t even go in our swimsuits!  I know it sounds crazy, but it has actually been a bit chilly down at the coast so we haven’t “officially” had a beach day yet.  We went to watch some dogs surf in the 7th Annual Loews Surf Dog Competition!  Oh my goodness!  If you have not yet had the opportunity to do such a thing, I highly recommend it.  I have never seen so many different types of dogs, not to mention people, in one place at the same time!  Let’s just say, there was a whole lot of barking and cheering going on!

It was worth the crowds, worth half of the beach we brought home in the car and worth the mile and a half trek the hubs made to find a parking space for us!!

Amidst our running here and there, my little Cailyn came down with a nasty cold that she’s still battling.  I think the Lord was telling us we needed to slow down and spend some time hangin’ out at home.  I just don’t have it in me to keep still, so I did some summer “spring cleaning,” ordered our school curriculum for next year and started on some projects to make our schooling area a bit more functional for the princesses.  After a few days of “green smoothies” and fresh farmer’s market meals like this one…she’s on the mend!

DSCN4558 Then topped it all with some eggs (5 eggs and 1 cup of milk, whisked together) and popped in the oven for about 45 minutes.

DSCN4561 Just this week I stumbled upon a new-to-me fruit and vegetable stand up the road from our house…Grebar Farms!  I picked up some boysenberries, blackberries, peaches, and some strawberries. 

DSCN4564 This fruit salad was so sweet and delicious, I ended up eating another bowl full for dessert!

DSCN4574 And more greens!  I also purchased a package of their “gourmet salad” greens, a bag of spinach, cucumbers and a bunch of kale.  This salad was a meal in itself after adding some orange and red peppers, broccoli, green onion, sunflower seeds and cranberries.  I’ve been eating it all week!
