We spent Thanksgiving in the dessert this year…..sand, cacti, tumbleweeds, and all! Though the dessert may be dry and bland our year has been far from that. We have so much to be thankful for and we’ve been so incredibly blessed by our friends and family. I can tell you one thing…the hubs was SO THANKFUL to have some meat on his plate!
Some of the treats I shared ‘round the table this year….
Heavenly Pumpkin Butter that I could eat straight from the jar…yep, it’s that good!
Buttery Pecan Biscuits (I just subbed in an all-purpose gluten-free flour so I could indulge on these lovely morsels) These were delicious covered (yes, covered) in Cranberry-Mango Spread and Pumpkin Butter
Zucchini Au Gratin…3 zucchinis cut into rounds and layered (like you would a lasagna) with onions and red peppers, then topped with gluten-free bread crumbs (mixed with some herbs and parmesan cheese) and some shredded mozzarella cheese! Bake @ 350 degrees for about 20 minutes.
And for dessert….Pumpkin Dump Cake! Exactly how it sounds, you just “dump” everything in and put it in the oven (recipe to come!).

There was no shortage of space for the princesses to run around….and pose for the camera!
She was covered from head to toe in dessert sand by the time we left!
Dessert sculptures seemed to be the highlight of their day. Looked pretty darn scary if you ask me!
When all was said and done, I was thankful for our day spent together as a family and thankful that it still felt like a Thanksgiving meal even though there wasn’t a lick of turkey or potatoes on my plate! We spent the rest of the evening watching movies together, looking at all the “Black Friday” ads in the paper, eating cereal for a post-Thanksgiving meal, and sipping on warm Candy Cane green tea. Simply Fabulous!!
Today marks the beginnings of Christmas in our home….the hubs was up at the crack of dawn to go shopping and I spent the day getting the house cleaned and ready for new decorations to go up! Have a fabulous weekend!!
