A New Journey…

Okay, so my last post said I would get back to my regular blogging schedule and I am honestly not sure what that looks like!  While I do have so much to share, the Lord has had other plans for my day!  And speaking of plans, the hubs and I are excited to be taking the next steps in our journey with Ignite Church. 

Here it is in a nutshell:   After several months of prayer and patiently waiting on the Lord’s timing we’re heading back to our hometown of Ramona to “UNITE” with Grace Community Church!  Through this process I’ve come to have a better understanding of how much greater God’s plans are than our own and if we wait upon Him the blessings will abound.  Even though it felt as if we were “down in the valley” for quite some time and even though it didn’t feel so good being stretched and broken down there, I am grateful for how God continues to mold and shape me into a beautiful vessel to by used by Him! 

Our “Unification Service” out at the park was such a sweet time of worship and fellowship among the two congregations.  The hubs and I are thrilled to be joining up with like-minded believers and in his words, “storming the gates of hell for Ramona!”  We’re rising up out of the valley, taking a breath of fresh air and we are not only ready, but beyond excited to walk this new path on our journey.

Speaking of refreshing, here’s a salad that will leave you with a little refreshment after a long, warm day!

DSCN4837 Mediterranean Lentil Salad

Yields 4-6 servings

Ingredients:

2 1/2 cups cooked lentils (or 1 package Trader Joe’s refrigerated Steamed Lentils)

1 1/2 cups chopped tomato (cherry or baby Romas work well)

1/2 cup fresh parsley, chopped

1 Tbsp fresh lemon juice

1 Tsp lemon zest

2 Tbsp extra virgin olive oil

fresh pepper, to taste

Directions:

In a medium mixing bowl, combine lentils, tomato and parsley.

In a small bowl, whisk together lemon juice, zest, olive oil and pepper.  Pour dressing over the salad and give a quick toss to combine.

DSCN4838 This salad’s light and lemony fresh taste makes it a great side dish or light lunch.  If you happen to have leftovers, turn it into a wrap with a little hummus and lettuce or serve it on top of your favorite greens for a tasty salad!
